Natural black olives are harvested in the winter, once they are naturally ripe from the tree that provides the healthiest product once collected, they are placed in a brine where a slow natural lactic fermentation takes place (2 to 4 months) and the bitterness of the fruit is mostly eliminated finally They are sweetened and prepared in our own way to provide a unique, delicious, nutritious and healthy product.

They are not naturally ripe, and their intense black color comes from an industrial oxidation process where green olives are usually subjected to strong alkaline treatments and exposed to iron salts, then they are packed in specific cans such as A10 and A12 cans and then sterilized in the autoclave.
